Last night I tried the first batch of my cider that I did a secondary fermentation on with raisins, holly honey and grains of paradise. At about 12% it's moderately strong, and the spice flavors were all there, but it's still really young. Ill check back on it in about 6 months.

So I went back to the fridge and grabbed a double chocolate stout and that proved the perfect nightcap.

Yes, I do. Get a bottle of extract and follow the directions. I tried to make it using roota and herbs once, but it was disappointing at best, toxic at worst. If you can find an A&W nearby, suborn a manager and get a carton of concentrate, but handle it carefully as it's mainly phosphoric acid.

I use a combination of both the extract and a good dose of dried sassafrass root bark shavings and fresh cherry bark. It's easy to dig the sassafrass roots as they usually grow in sandy soil. 5 gallons takes about a double handfull of dried root bark shavings. Think carrot peelings.

Use about 2 cups of sugar to ferment and provide carbonation in the final product. Less if you put it in glass, but I serve from a stainless keg and it can take the extra pressure.
